- 1 cup cottage cheese (4%)
- 4 eggs
- ¼ cup milk (2%)
- 1 cup unbleached AP flour
- ½ cup almond flour
- ¼ cup unflavored whey protein powder
- 1 tsp baking powder
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
- 1 cup grated zucchini, squeezed dry
- 5 oz sharp cheddar cheese, shredded

Preheat the oven to 375 degrees F. Place cupcake liners into 12 muffin tins and lightly spritz with olive oil spray. In a large bowl whisk together the cottage cheese, eggs, and milk. In a separate bowl, whisk together the flours, whey protein powder, baking powder, garlic powder, salt and pepper. Add the wet mixture to the dry mixture and stir in the zucchini and shredded cheese. Bake for 25 minutes or until set. Server warm.
